Ice Tray Sushi
So, Ice Tray Sushi was a blast to make and especially when it’s with a member of your family who loves to try new things in the kitchen!

The one thing I can highly recommend is to purchase this sushi rice – it’s available on Amazon.

For our first time – everything worked out well! We were pretty pleased with ourselves! It’s a pretty simple process — cut up your cukes into the small sticks, slice your avocado top-to-bottom and then straight down the middle, cut your seaweed to the size of your ice cube tray and cut up your choice of fish – ours was smoked salmon (if your a lox and bagel kinda person you know why!). The only part that we know we need to do better with is the cream cheese — although we cut it at as thin as we could, we still thought it was too much; however, it didn’t ruin the taste of each piece at all!
So, here is how we put it together in each cube in the ice tray – just know that we’ll do it different next time — the plastic wrap was NOT fun, but we know that the salmon should not have been on the top since it wanted to stay with the plastic wrap when trying to remove from the ice tray!
Place the plastic wrap down inside each of the cube sections of the ice tray. Then, we placed a piece of our smoked salmon followed by the avocado and cucumbers. On top of that we placed our cream cheese followed by the seaweed and then the rice. The rice is very sticky – like ugghhh sticky, but it needs to be to hold things together even though this is not a traditional sushi roll. We did figure out how an actual roll is done and we’re going to try that next time without a sushi making kit.
The directions called for the ice tray to be placed in the fridge for about 30 minutes to “bring all of the ingredients together”, but we just opted to plate it – because we really wanted to try it! It turned out really well and we couldn’t even finish all of it (we had more than the two shown – we actually made three smoke salmon rolls and one veggie roll). Give it a try – you’ll probably be just as impressed as we were for our very first time!

If you love Limoncello like I love it, but the cost makes your wallet scream … here’s a great recipe for making your very own! I’ve tried a couple other recipes and while they were good, they were beat hands down by this recipe! So, give it a try!
